Nest Cookies

Last Easter, I made-up these little nest cookies. They were so fun that we decided to make them again this year. Just take a box of Funfetti cake mix and add two eggs, 1/3 cup oil, and 1 cup flour. Roll into balls and make an indentation into the center.
Bake at 375 for 6 minutes.

While they are baking, put some coconut flakes into a plastic bag and add a few drops of green food coloring.

Shake until flakes are completely green. (The assistants LOVE this part--they go a little crazy!)
While cookies are cooling, make a glaze. When cookies are completely cooled, add glaze then roll cookies (or dip) into colored coconut flakes. Then add easter candy of choice. We used jelly beans this year. (Last year we used rabbits, which were really cute too!)
